Description
Cesare comes from the farm’s best Sangiovese grapes.
The selection of the grapes during the harvest is carried out strictly by hand.
After the harvest and subsequent pressing / stemming, made with little pressure, without excessively breaking of the grape, an alcoholic fermentation up to 25° C / 77° F follows and then a maceration for a duration of about 22 days.
After an aging of 1 year in stainless steel tanks, it follows a period of 1,5 years in French Oak Barrels; finally it concludes its refinement in bottle for 2 years.
The name Cesare is in honor of my great-grandfather, founder of the winery and first generation of wine make in our family.
