Description
This is our only wine made from French grape varieties, 100% merlot.
This grape variety was added to the winery by my father, Angiolino (third generation) in the 1990s.
It represents only a small percentage; on average we produce about 1,000 bottles a year.
We do an early harvest, usually in late August or early September.
It has an alcoholic fermentation of about 22 days at a temperature of 25°C, and throughout fermentation the must remains in contact with the skins.
After aging for 1 year in stainless steel tanks, it is followed by a period of 1.5 years in French oak barrels; finally it concludes its aging in the bottle for 2 years.
